The first new brewery since the 1970s to be built in the Czech Republic

The Czech investment and construction company Ross Holding has announced plans to build and operate a new brewery in Chotebor near Havlckuv Brod, Radio Praha reported on August 22.The new facility is to bring a yearly output of 10 to 25 thousand hectolitres. It will be the first brewery built from scratch since the establishment of Radegast in the 1970s. If everything goes according to plan, production of the new Czech beer brand should start next summer.Today, there are about 50 industrial breweries and about 70 micro-breweries in the Czech Republic, which altogether produce some 20 million hectolitres of beer a year. Around 400 beer labels are available on the market. However, Roman Stryk, the head of the investment company Ross Holding is sure that there is a gap on the market for the new producer.”We want to produce four to five brands of beer using the traditional Czech method. We don’t want to use the cheap method used by big breweries, which produce so-called Euro-beer. We want to make Czech beer. Our brewer says that it’s a fine beer with a full taste.”The project was originally outlined by an English beer enthusiast called Ian Jeffrey, who had to sell his idea due to health problems. However, he is still involved and is currently discussing the possibility of selling the new Czech brew in his retail chains in Great Britain.”Our brewery has a capacity of 10 to 25 thousand hectolitres a year, which is still in the category of smaller breweries. The investment should be around 40 million crowns. We want to produce special, traditional Czech beer which should primarily target the local market. But we are also holding talks with an English company and we plan to eventually expand into eastern markets as well.”Construction of the new brewery in Chotebor should start in November and the new Czech beer could be available on the market shelves around this time next year. One thing, however, still needs to be resolved - the right name for the new beer brand.

Christmas Party How-To: Eggnog Tasting

Christmas is fast approaching and you’re probably in search of Christmas party ideas. For a great low-key party idea, considering inviting some friends over for eggnog. Since it’s an eggnog party, serve a few different kinds of eggnog and some bites to eat. See below for two great eggnog recipes to try.

Traditional Eggnog

  • 6 Whole Eggs
  • 1 Quart Milk
  • 1 Small Pinch Salt
  • 14 Oz Can Sweetened Condensed Milk
  • 1 Teaspoon Vanilla Extract
  • 1/3 Pint Heavy Whipping Cream
  • 1 Pinch Ground Nutmeg
Directions
  • Beat the eggs.
  • Mix in condensed milk, vanilla, quart of milk and salt.
  • Beat the whipping cream until soft peaks form.
  • Fold into egg and milk mixture and sprinkle with nutmeg.
  • Serve chilled.

Kahlua Eggnog

  • 3/4 Teaspoon Ground Cinnamon
  • 3/4 Teaspoon Ground Nutmeg
  • 1 Pinch Ground Cinnamon as Garnish
  • 1 Pinch Grated Chocolate as Garnish
  • 8 Whole Eggs
  • 3 Cup(s) Chocolate Milk
  • 2 Cup(s) Milk
  • 1/2 Cup Brown Sugar
  • 1 Cup Cream
  • 1 Cup Kahlua liqueur (or strong coffee)
  • 1 Cup Dark Rum
Directions
  • In a large saucepan over a medium heat, pour the milk and chocolate milk. Heat the milks, but don’t boil!
  • In a large bowl, beat the eggs and brown sugar until they are well combined and of a reasonably thick consistency.
  • When the milk mixture is hot, add approximately half of it to the bowl containing the beaten eggs and brown sugar.
  • Whisk it well.
  • Pour all of the egg, sugar & milk mixture back into the large saucepan. Reduce heat to low.
  • Slowly and gently, add in the Kahlua liqueur/coffee, and then the cream.
  • Stir continuously until the mixture has thickened enough to be able to coat the back of a spoon.
  • Remove the eggnog from the low heat. Stir in the dark rum, ground cinnamon and ground nutmeg.
  • Cover with plastic wrap and refrigerate until chilled (at least 3 hours).

Is culinary school really necessary? I always thought if you knew how to cook, you knew how to cook. It turns out I was wrong. If you want to go into culinary arts as a career, culinary school is just as necessary for you as law school is for a lawyer. I found that even if you are a great cook, there are simply skills and qualifications you will get from culinary school that you need when it comes time to enter the professional culinary arts world.

You, like many people, may believe that cooking is a talent that you are just born with. That is partially true, but many in the culinary arts industry recognize that it is indeed a talent, but it is also a skill. Though you may have an understanding of how to make food, in culinary school you will learn more about ingredients, foods, and how to combine them. By being well informed and educated, you will be able to take better advantage of your given talents.

You may also not realize that culinary school can prepare you for more than just becoming a “cook.” Most people think of chefs, caterers, and restaurateurs as the only people who attend culinary school, but that simple isn’t true. There are countless jobs available to graduates of culinary school. You can choose to be in restaurant management, work in retail food markets, or even become a food writer to name a few of the options. Culinary school is an education to prepare students for any career in food, not just becoming a cook.

The point is that if you really are serious about a career, any career, in culinary arts, then culinary school is necessary. Yes, like any education, it is expensive, but in the end wont it be worth it to be able to get a good job doing what you want at the restaurant or company with you want to do it? If you were to become a lawyer, you would have to go to law school and if you want to become a doctor, you need to go to medical school. So to have a successful culinary arts career, you have to go to culinary school.

When you go to select the culinary school you want to attend, you should look for one that is accredited and will get you the certificate or degree you need for the career you are after. A good culinary school will train you in the use of quality ingredients, proper presentation, and even balance for meals. The program will help you to understand everything about the food from the purchase of the ingredients to the presentation of the finished meal. With the overall culinary education you will get, you can then make full use of the talents you have.

If you love to cook and see yourself as a chef, restaurant manager, or even a food critic, you should consider culinary school. The knowledge and basic skills you will acquire there will allow you to pursue a long and successful career in the career you want.
